Bruschetta with a "punch"

This was our first attempt at home made Bruschetta. When conversing about its quality and flavour at dinner, it was decided that "punchy"was the word most suited to describe its taste. The combination of flavours hits you in the kisser at first, but it's a winner.

Ingredients:
- two vine ripe tomatoes
- one Roma tomatoe
- handful of flat leaf parsley
- handful of basil
- two shallots
- 50 grams fresh grated parmesan
- olive oil to taste
- balsamic vinegar and caster sugar dressing to taste
- salt + pepper
- three cloves crushed garlic
- one rustic french roll

Method: (mix in one bowl)
1. dice tomatoes and shallots
2. roughly chop parsley and tear basil leaves
3. crush garlic
4. add a swirl of balsamic vinegar and one dessert spoon of caster sugar + mix
5. salt and pepper for seasoning
6. add olive oil to taste
7. slice and coat roll with olive oil (toast in pan for 30-60 seconds on both sides on high heat)
8. scoop desired amout of bruschetta mix on freshly toasted bread
9. shave parmesan and sprikle on top

Bon appetit!
